Words from our Winemakers
So far the growing season has been good; however, we could stand a little more sun and heat. In the vineyard we are hedging, pulling the first 3 leaves to expose the fruit to more sunlight and increase airflow. We are also finishing with lateral pulling. We only keep the vertical shoots. Our trellis system is VSP or (vertical shoot positioning) as we train our shoots off the main cane upwards they start growing lateral branches. We remove these for airflow and to concentrate the plant's energy in the fruit. Fruit Quality is our goal.
Thinning will start in a couple weeks and we are planning on making Verjus again this year. Verjus is made by crushing the thinned grapes. It’s a great replacement for lemon or lime juice, and it makes a great marinade or salad dressing!
